These seeds have a high oil content, and although the oil is relatively stable while the seed is intact, refrigeration is recommended to slow the oxidation process and prolong the life of the seed. Flax (also called "linseed") is very high in fiber, and if crushed you will benefit from the high Omega 3 Fatty Acids.
Flavor - bland, slightly green-grassy taste if eaten raw or plain. Excellent ingredient for breads and other products, especially ground.
