Ghee is a main staple in Indian cooking and makes for a rich, full flavor in any sauteed or stir-fried food. It is a natural food source fat, and is a wonderful alternative to processed oils commonly found in the grocery store.   It is simple to use, and has an amazing non-refrigerated shelf-life. Just be sure to store it in a cool, dark place (not the cupboard over the stove), and you can get between 1-2 years, even after opened! Around here, ours does not last that long.
