Chicken and Biscuit Casserole

A recipe using what you already have (including leftovers)

 

Chicken and Biscuit Casserole

 

I’m deceiving you.   That is because although I usually use chicken, I actually used leftover frozen turkey in the picture you see above.  This is one of those recipes that begs you to play, using a pinch-of-this and anything left over lurking in the fridge.  It’s the quintessential makeover meal.  You are really looking at my leftovers in that picture.


Be prepared for that rich pot-pie flavor, but without the mess and hassle of a homemade pie crust.  I really dislike making pie crust.  This meal can be start-to-finish in 40-45 minutes.

 

Vegetable Mix

You Will Need:

  • 1 batch of buttermilk biscuits (you can roll these out during step #4)
  • 2 cups homemade broth (anything, but here’s a recipe for free vegetable broth)
  • 2 cups cubed potatoes (approximately 3 small-to-medium)
  • 5 carrots
  • 2 stalks celery
  • leftover broccoli, bok choy, peas, whatever is lurking in the fridge
  • 1/2 onion, diced
  • 4 cloves garlic
  • 5 sprigs fresh parsley (or 3-4 Tbs dried)
  • 2 bay leaves
  • 1/8 tsp pepper
  • 1/2 tsp salt
  • 1- 1-1/2 cups of pre-cooked meat (chicken, turkey, leftover sausage, etc), chopped
  • Bacon fat, lard, or other traditional (non-hydrogenated) fat

You will preheat over to 400°.

1) Place all of the vegetables into the bottom of your stock pot and saute them in 2 Tbs bacon fat, stirring occasionally for 5 minutes.

2) Add the meat, salt, pepper, bay leaves, and just enough broth to barely cover the mix.  Depending on how heavy-handed you got with the meat and veggies, you might need more than 2 cups broth or just add some water. 

3) Bring to boil; then cover and reduce heat.  Simmer for about 30 minutes. 

4) While your mixture is simmering, turn your attention to rolling out the buttermilk biscuits. They will take you approximately 15-20 minutes to roll out.

5) In a casserole dish, place the vegetable/meat mixture on the bottom (be sure to pick out those bay leaves).  Place the raw biscuits on top of your casserole in any configuration you desire.  If desired, spread some butter on the tops of the raw biscuits.

6) Bake at 400° for 10-12 minutes, serve warm.
