Pumpkin Cream Cheese Oat Bars (or Oat Muffins)<\/h1>\n

Pumpkin Cream Cheese Oat Bars, I literally invented this one as I went, not even basing it upon or adapting from another recipe.\u00a0 It was a fantastic surprise!<\/span><\/p>\n

I started out baking these in my go-to cake pan, and then I ended up with a muffin tin full as well.\u00a0 It was very good both ways, so I suppose you can just do what suits your fancy.\u00a0 Pumpkin and cream cheese were both on sale, so I started with what I had on hand.\u00a0 I think that the topping makes these as delicious as they are\u2014please do not skimp here!<\/span><\/p>\n

Also, I used half of a box of cream cheese and the flavor was light.\u00a0 I could envision these being even more decadent though, so if you try it with more cream cheese, would you please leave a comment below and let us know how it turns out?\u00a0 One other note, I used hard red flour and they were great\u2014but next time I will try soft white, as it is the best choice for a quick bread.\u00a0 In either case the cream cheese pumpkin combo yield a moist but firm overall product that my kids love with milk as a snack.<\/span><\/p>\n

Do not be intimidated by the seemingly long list of ingredients\u2014the topping and batter ingredients overlap and these are mostly basics you already have on hand.\u00a0 You could simplify with \u201cpumpkin pie spice\u201d\u2014if you do, let me know what you think of it!<\/span><\/p>\n

I have cut the recipe in half, so this should give you either a dozen muffins or a cake pan\u2019s worth.<\/em><\/span><\/p>\n

Topping:<\/strong><\/span><\/p>\n

2\/3 cup old fashioned oats<\/span><\/p>\n

\u00bc cup brown sugar<\/span><\/p>\n

1 tsp cinnamon<\/span><\/p>\n

2-3 tsp butter, melted<\/span><\/p>\n

\u00a0<\/span><\/p>\n

\u00a0<\/span>\"Pumpkin<\/span><\/p>\n

\u00a0<\/strong><\/span><\/p>\n

Batter:<\/strong><\/span><\/p>\n

1 \u00bd cups fresh-milled flour<\/a><\/span><\/p>\n

1 cup old fashioned oats<\/span><\/p>\n

1 tsp baking powder<\/span><\/p>\n

\u00bd tsp baking soda<\/span><\/p>\n

1 tsp cinnamon<\/span><\/p>\n

1 tsp ground nutmeg<\/span><\/p>\n

1 tsp ground cloves<\/span><\/p>\n

1 cup sour cream<\/span><\/p>\n

3 cups pumpkin puree<\/span><\/p>\n

4 oz (half box) of cream cheese, softened<\/span><\/p>\n

\u00bd cup brown sugar<\/span><\/p>\n

\u00bc cup olive oil<\/span><\/p>\n

1 egg<\/span><\/p>\n

\u00a0<\/span><\/p>\n

\u00a0Directions:<\/strong><\/span><\/p>\n

    \n
  1. Preheat oven to 350 degrees.<\/span><\/li>\n
  2. Stir topping ingredients and set aside.<\/span><\/li>\n
  3. Combine dry ingredients (flour, oats, baking powder, baking soda, spices).<\/span><\/li>\n
  4. In a separate bowl, add sour cream, pumpkin, cream cheese, brown sugar, oil, and egg.\u00a0 Beat for approximately 2 minutes to ensure blending of the cream cheese and to get air into the egg.<\/span><\/li>\n
  5. Pour one bowl into the other, stirring lightly.<\/span><\/li>\n
  6. Pour into cake pan or muffin tins.\u00a0<\/span><\/li>\n<\/ol>\n

    \u00a0<\/span><\/p>\n

    If a cake pan, it will take 30-40 minutes.\u00a0 If muffins, 30 minutes.\u00a0<\/span><\/p>\n

    This pumpkin cream cheese recipe is delicious and easy.\u00a0 I usually try to make one other baked good item on my bread baking day to get my family through the week with snacks and quick healthy breakfast choices\u2014so this works well either as pumpkin cream cheese bars or muffins!<\/span><\/p>\n
