I am an artist.<\/span><\/p>\n

My canvas is the canning jar.<\/span><\/p>\n

 <\/span><\/p>\n

I swirl the blues of berries and the purples of plums, the apricot oranges and lemon-yellows of varying citrus hues in my marmalades and jams.  I line up the cucumber-soldiers, standing at attention and waiting for pickling orders.  My green beans criss-cross in verticals and horizontals while pickled garlic curves like little crescent moons. <\/span><\/p>\n

Canning is creativity.<\/em><\/span><\/strong><\/span><\/p>\n

 <\/span><\/p>\n

My jars line the counter in solidarity, a visual demonstration of preparedness and nourishment.  I may never stand in a picket line or attend a rally against giant food companies or governmental abuses, but the jars on my counter are my small act of defiance.  They shout not the slogans of anger or hatred but peacefully proclaim, “This family is independent.” There are no pickets or boycotts, but copious cupboards that signal one more family is simply not interested in the monotonous fodder found in the dimly lit aisles (with bad music).<\/span><\/p>\n

\"Jars<\/span><\/p>\n

Canning is taking command of food choices.<\/em><\/span><\/strong><\/span><\/p>\n

 <\/em><\/span><\/p>\n

I knocked on my neighbor’s door today.  In one hand was a loaf of homemade bread, in the other was blueberry jam.  When I was sad and struggling, they met me with a bouquet of yellow roses in hand.  I felt stronger to carry on, so I did.  Now it’s my turn to say thank you, my turn to bless, to help, to encourage, and to strengthen.  Homemade jam speaks more than words.<\/span><\/p>\n

\"Homemade<\/span><\/p>\n

Canning is communication.<\/em><\/span><\/strong><\/span><\/p>\n

 <\/em><\/span><\/p>\n

Overloaded schedules, occupied minds, tired feet.  Hectic itineraries or unexpected circumstances altogether; I gaze at the shelf and there they stand—jars framed in by the pantry door like a WWII era poster.  Chili today, kids? No, chicken soup sounds good.  There are no chemicals or labels with warnings about what causes cancer in California.  These are time-tested comfort foods that are meant to nourish and heal, to fill the tummy and provide the depth of flavors only real food can provide.<\/span><\/p>\n

\"Full<\/span><\/p>\n

Canning is cookery.<\/em><\/span><\/strong><\/span><\/p>\n

 <\/em><\/span><\/p>\n

 <\/span><\/p>\n

Canning is yet even more than that; it is the sense of satisfaction, of accomplishment, and of skill. <\/span><\/p>\n

It is the passing on of tradition for some, and memories too.   It is the realization of a cycle, the cycle of producing, preserving, and preparing the food that enables life. <\/span><\/p>\n
