A Personal Family Favorite & An Alternative to High Fructose Corn Syrup

Those of you who follow this blog know that we do not do High Fructose Corn Syrup. Or any corn syrup, or corn starch or food starch or-or-or-or…. I took great pride for years that I make “everything from scratch” but I was a liar.

I mean, compared to the average person, I made most things from scratch. Over time, though, I would make things inconsistently. Take crackers for instance. I always used to make my own but it was so difficult to keep up wth the family’s consumption that I often resorted to the healthiest ones I could find. I cheated. Really, I do not think I should feel guilty for that per-se. If I feel guilty for anything it is for the pride I possessed that I was doing something noble, even while poisoning my family. You see, we discovered in a very hard way that we have a child allergic to corn. And so I had to purge my home of all of those little “cheats” that wedged their way into my pantry slowly through the years. I opened my cupboards and saw compromises staring back at me.

"Homemade

In the quest to get back to foods that keep my family happy and healthy, I had to dust off a few of Grandma’s recipes. My grandma was the toughest person I have ever known, when faced with any type of adversity. Okay, this has nothing to do with the recipe, but I gotta tell ya–I cannot think of my grandmother without remembering her grit, her determination. As a non-driver and main caregiver for my grandfather, we remember her walking to the grocery store–weeks after a heart surgery and on a broken leg! Everyone would get mad about such things, but I still see her as a hero and I hope to one day have her spirit of determination. On that note, I am determined to keep my family healthy and off the modern food system that is poisoning this generation (and specifically, my child).

"How

This is a sauce or syrup, simply by how long you let it boil down or by adding more sweetener. We use sugar for very few things, I typically use honey in anything that calls for sugar. However, this recipe really does require it, so please use organic sugar to avoid the pesticides and herbicides. I also believe that we need to source our food as ethically as possible, for whatever level of awareness we might have. Since I study food, my awareness is high and I cannot bring myself to buy the stuff devastating entire communities and families (so we buy Fair Trade). You can now get Frontier Organic, Fair Trade Sugar in bulk at Pantry Paratus!

"Organic

(My last bag before switching to the bulk Organic, Fair Trade at Pantry Paratus! Wow, do I save money and packaging).

  Delia’s Chocolate Syrup Recipe

A six-minute recipe. Makes just under 72 ounces (3 old pasta sauce jars’ worth)

  • 6 cups sugar

  • 2 cups cocoa powder

  • 3 cups hot water

  • 2 teaspoons vanilla

On a pot over medium heat, add water, sugar, and cocoa. Raise heat and bring to boil. Continuously stir and boil for 5 minutes. Once you have removed it from the heat, add vanilla. Pour the sauce into jars immediately and let it cool in the jars. Once it cools, refrigerate.

    "Chocolate

Use this chocolate syrup recipe on your homemade ice cream, chocolate milk, in your coffee, on (or in) anything else that would normally call for chocolate syrup or chocolate sauce.

    Enjoy,
